INGREDIENTS
2 tbsp olive oil
1 whole head cauliflower / break into large pieces
2 spring onions, cut into 4cm/1½ in lengths
1 red onion, cut in slices
1 fresh tomato, cut in slices
1 garlic clove, crushed
1 tbsp ginger paste,
1 red pepper, cut into thick matchsticks
2 tbsp hoisin sauce
2 tbsp soy sauce
2 tbsp red vinegar
4 tbsp vegetable stock
pinch salt
pinch black pepper
Method
Heat a wok or a pan on a high heat and add the olive oil. Add the spring onions, garlic, black pepper, salt, cauliflower, stock, ginger, and stir-fry for 2 minutes, then reduce the heat. Add tomato, red pepper, soy sauce, hoist sauce, vinegar, add tbsp of water if need it, stir-fry for 2 minutes. and cook over a high heat for a further 2 minutes or until all the vegetables are cooked but not too soft.
Serve with white rice and fries
